Recipe - Baked Vegetable Au Gratin


Baked Vegetable Au Gratin is one of the first dishes that comes to mind when one thinks of continental delicacies.


INGREDIENTS For Sauce

  • 1 cup Everhealth High Protein Low Carb Flour  

  • 4 cups Milk

  • 50 gms Butter or 1/4 cup olive oil

  • 2 Cheese slices

  • Salt and Pepper to taste

From the basket of fresh veggies, we need

  • 1cup small cubed carrots (1-inch pieces)

  • 1 cup beans

  • 1 red bell pepper

  • 1 yellow bell pepper

  • 1cup baby spinach

  • 1 potato (medium (21/4 ” to 3″ diameter, raw) peeled and cubed (optional)

  • 1 cup homemade paneer cut into small pieces

You can also add: Fresh Broccoli, cut into florets, Zucchini thickly sliced, Onions, Green peas and Sweet Corn kernels etc. You can add anything of your taste. INSTRUCTIONS Firstly, steam or boil all the vegetables for 5 mins except bell peppers and once boiled put them aside. Instructions to make the sauce

  1. Heat the butter in a broad non-stick pan, add the Everhealth flour and cook on a slow flame for 1 to 2 minutes, while stirring continuously.

  2. Add the milk, mix well and cook on a medium flame for 3 to 4 minutes or till the sauce thicken, while stirring continuously.

  3. Add the salt and pepper, mix well and cook on a medium flame for 1 more minute.

  4. Store in an air-tight container and use as required.

How to proceed

  1. Heat the butter in a broad non-stick pan, add the mixed vegetables and sauté them on a medium flame for 2 minutes.

  2. To vegetables add the sauce, along with salt and pepper powder to taste. Mix it well and cook on a medium flame for 3 minutes, while stirring occasionally.

  3. Now transfer the mixture into a baking dish, sprinkle the cheese evenly over it or two cheese slices and bake in a pre-heated oven at 200°C (400°F) for 15 minutes. Once baked, serve immediately.
