Recipe - Banana Pancakes


Recipe - Banana Pancakes Cooking Time: 20 minutes Serves: 9 Pancakes

INGREDIENTS

  • 1 cup Gluten-Free Flour

  • 1 tablespoon Gluten-Free Oatmeal (optional)

  • 2 Ripe Bananas (about 10 ounces) 

  • 1 cup Egg whites or 2 Eggs

  • 1/2 Teaspoon Cinnamon

  • 1 Teaspoon Baking Powder

  • 1 Pinch of Kosher Salt

  • 1/4 cup Chopped Walnuts

  • 1 Tablespoon Oil/Butter

  • 1 Tablespoon Honey (Optional if you like sweet)


INSTRUCTIONS

  1. Combine banana, egg whites, flour, gf oatmeal (optional), cinnamon, baking powder, and salt in the blender and blend until you have a nice thick batter. Add honey if you like.

  2. Stir in walnuts or any other add-ins you like. Blueberries, pecans, and chocolate chips are some of our other favorites. 

  3. Heat a large non-stick skillet over a medium heat and lightly coat with butter/oil. 

  4. Pour pancake batter in the pan to form small-medium sized pancakes. 

  5. Cook for two minutes or until you see small bubbles begin to form on the top.

  6. Flip and cook for another two minutes or until golden brown and set through. 

  7. Repeat until you have used all the batter.

  8. Serve with your favorite pancake toppings and enjoy.
