Recipe - Pizza in a Pan

You can make mouth-watering pizzas at home, even if you do not have a convection or microwave oven. All you need is a broad non-stick pan and a bit of tact. This delicious Pizza-in-a-Pan is colorful and attractive, with a range of lip-smacking toppings and seasonings ranging from colourful capsicums, crunchy baby corn and juicy zucchini, to a tangy pizza sauce, and of course of cheese. The secret to making the perfect pizza in a pan, is to cook on a very slow flame as these pizzas tend to cook faster than in an oven and will get crisp soon. If you cook it on a high flame, it will get burnt even before all the toppings are cooked. So, if you patiently cook it on a slow flame, the outcome will be absolutely delightful.

Makes: 4 Pizzas
INGREDIENTS:
For Base:
12 tbps Everhealth flour (3 each for one base)
A little of lukewarm water
For Tomato Pulp/Sauce:
6 Tomatoes
2 tbsps olive oil
8 garlic gloves (Finely Chopped)
1 tbsp Tomato Ketchup
1 Onion, finally chopped (Optional)
To taste:
Chili Powder
Oregano
Salt
For Topping:
½ cup sliced red and yellow bell peppers and green capsicum
½ cup diagonally cut and blanched baby corn
½ cup diagonally cut zucchini
1 Onion chopped (Optional)
Dried mixed herbs for sprinkling
Dry red chili flakes
For Garnishing:
1 cup grated processed cheese (you can use less or replace it with fresh cheese)
4 tsp ghee or olive oil for cooking
INSTRUCTIONS:
For making 4 thin crust Pizza Bases:
Mix 12 tbps of Everhealth flour for 3 to 4 mins with lukewarm water. Make sure it is of pouring consistency.
Add a little oil to a non-stick pan/tava and pour the batter evenly.
Flip the base and cook it to the extent that it does not break and/or have any cracks. Do not bake it much as it has to be kept again on Tava for making pizza.
For the Tomato Pulp/Sauce:
Make criss cross on the base of the tomatoes and place them in boiling water for 2 to 3 minutes or till the skin begins to peel.
Drain the tomatoes, cool completely, peel, deseed and roughly chop them and blend in a mixer to a smooth pulp. Keep aside.
Heat the olive oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
Add the onions, mix well and sauté on a medium flame for 1 to 2 minutes.
Add the prepared tomato pulp, oregano, chili flakes, tomato ketchup, chili powder and salt, mix well and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
Add the sugar, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally. Keep aside.
How to proceed
Place the already made pizza base from the Everhealth flour on a clean, dry surface.
Put ¼ th of the pizza sauce and spread it evenly.
Place a few capsicums, babycorns and zucchini evenly over it.
Finally sprinkle, mixed herbs, chili flakes and ¼ cup of cheese evenly over it.
Heat a broad non-stick pan and add 1 tsp of ghee.
Place the homemade pizza on a pan/tava and cover it with a lid and cook on a slow flame for approximately 4 to 5 minutes or till the base is crispy and the cheese has melted.
Repeat steps 1 to 5 to make 3 more pizzas.
Cut each pizza into 4 slices and serve immediately.
